This may or may not sound insulting, but it isnt intended to sound that way, so please dont take it that way.
Jolteon may be faster, but espeon is still very fast and hits harder. You might even say jolteon's speed is a bit overkill. Also, electric may be a much more solid typing than psychic, but espeon has access to an amazing ability in magic bounce and has at least a bit more versatile movepool. Basically, Jolteon is outclassed as a speedy special attacker by other pokemon, while espeon is always relevant due to a fantastic ability along with a similar stat layout.
Further, I dont see how you would even have knowledge of how espeon plays if you havent played since yellow, as espeon made its first appearance in the generation following that which yellow was in
Finally, I know that zapdos was good in the first generation as it had one of the highest base stat total, making it very powerful. Yes, flying negates electric's weakness to ground but it also removes its resistance to electric as well as adds crippling weaknesses to rock and ice. Yes, zapdos is good, but it is, too, for the most part, outclassed at what it does.
Most of this is from a competitive standpoint, just so everyone knows. And, again, this wasnt supposed to sound pretentious in any way.

I probably shouldn't judge Espeon not having used him, but Jolteon is, as you said, overwhelming in speed. You can teach him abilities if the ones he learns naturally aren't working for you. I don't even know what Dark types are strong/weak too but Light types, lol. I really should play the newer Pokemon, heard it even has 2v2, which just sounds stupid, wouldn't you just have your two pokemon spam attack one? Or have one heal as the other attacks?
When I say ability, I mean ability, not move. You are probably not familiar with abilities as they were introduced in gen 3, I believe.
Espeon is a psychic type, not dark. Dark is weak to fighting and bug, psychic is weak to bug, dark, and ghost.
Double battles (2v2) is alright, but not my kind of thing. There are even triple battles now.
